Vegetable Couscous & Pine Nuts

Ok, I had no idea how easy couscous is to make. Almost...disturbingly easy...
2 T olive oil
2 cloves garlic, minced
1 C assorted vegetables (chopped mushrooms, asparagus, bell peppers, onions, etc.)
1 1/4 C chicken broth

1 C couscous
1/4 C nuts (I prefer pine nuts, but any are good or you can omit)
salt and pepper to taste
Cayenne or paprika for color

Heat oil in a pan and saute garlic until fragrant and then add the vegetables and cook until slightly soft. Add the chicken broth to the same pot and bring to a boil.

Turn off heat and pour the couscous directly into the pot, gently stir and cover for 5 minutes. Fluff with fork and season with salt, pepper and nuts.
