2 T olive oilHeat oil in a pan and saute garlic until fragrant and then add the vegetables and cook until slightly soft. Add the chicken broth to the same pot and bring to a boil.
2 cloves garlic, minced
1 C assorted vegetables (chopped mushrooms, asparagus, bell peppers, onions, etc.)
1 1/4 C chicken broth
1 C couscous
1/4 C nuts (I prefer pine nuts, but any are good or you can omit)
salt and pepper to taste
Cayenne or paprika for color
Turn off heat and pour the couscous directly into the pot, gently stir and cover for 5 minutes. Fluff with fork and season with salt, pepper and nuts.
