Mediterranean Polenta Rounds

The vibrant red, green and yellow make a beautiful presentation.
a tube of prepared polenta, sliced 1/4" thick
goat cheese
chopped balsamic-marinated mushrooms (optional)
sundried tomatoes (jarred in oil) or roasted red bell peppers
fresh basil chiffonade (i.e. basil rolled up and sliced thinly)
Grill/Cook polenta slices in a cast iron skillet. Top with cheese and tomatoes/peppers and basil.
