Chipotle Chicken Quesadilla


When you're hungry and bored, this is what happens. I used leftover chicken from the Adamos' but rotisserie chicken works. If you have more time or if you don't have the pre-made chicken, you can use the sauce as a rub, just add a little more salt.
Sauce & chicken
Diced or shredded pre-cooked roasted chicken or 1 chicken breast
2 T Cabernet
2 chipotle chiles (canned)
1 T olive oil
2 cloves garlic
1/2 t cumin
salt and pepper

shredded cheddar cheese
tortillas

chopped lettuce
salsa
sour cream
chopped tomatoes
green onions, sliced
Toss all the sauce ingredients other than the chicken into a food processor or blender and process until smooth. Rub onto the raw chicken breast or toss the roasted chicken cubes in it. Heat a pan on medium high, add 1 t of oil and cook the chicken. When the breast is ready, slice.

In a separate pan, heat one tortilla on medium and add the cheese and chicken and a little more cheese on top of the chicken then top with a tortilla. When the cheese has melted a little, flip.

Cut into 6 wedges and serve with salsa, sour cream, tomatoes, and green onions on top of lettuce.
