Chewy No-Butter Granola


After trying Trader Joe's granola (I forget the name but it's in a chunky plastic box and is really chunky...pretty homemade looking) at the Ferraros' I was craving the stuff for a while. This isn't an attempt to recreate, but something quick to appease the stomach beast.

Adapted from the book, “Instant Gratification”. Add walnuts, or almonds, whatever dried fruit you’d like. Still looking for a healthier, not too sweet granola. This one is okay, yet softer than a normal granola.
1 large egg
1/4 C firmly packed light brown sugar (maybe 1/2 C)
1 T vegetable oil
½ tsp cinnamon
½ tsp vanilla extract
pinch of salt
1 1/2 C rolled oats (try 1 C with ½ C sugar)
½ C dried fruit
¼ C walnuts
Spread onto a pan and bake at 325 for about 15-20 minutes until light brown…not dark, otherwise they’ve burned….the what you’ve got above. Serve with yogurt, and honey if it isn’t sweet enough.
