Wela’s Red Bean Rice Cake

Finally! I have a recipe for this delicious baked mochi cake with red beans! 1 C of sugar sounds like a lot, but it makes a lot so it's actually not that sweet.

Before Wela became baking queen, she used to say this was the only thing she could bake. So simple, yet so delicious. I've used all sorts of rice flour, but most people like this one:

1/2 can of sweet red whole beans (Morinaga Ogura-an Sweetened Red Beans, Mashed) resist adding more
1 (16 oz) box of sweet rice flour/Mochiko (Koda Farms Brand)
3 eggs
2 C milk
1 C vegetable oil
1 C sugar
1 tsp baking powder
Preheat oven to 350 degrees.

Whisk together all the dry ingredients. In a large bowl, whisk all the wet (not including the red beans). Add the dry to the wet, then stir in the red beans.

Bake for 55 minutes in a larger than 13x9x2” pan, sprayed with oil. I don't know what the exact dimensions are...if you don't have this sort of pan, distribute batter.
