Wela’s Pumpkin Cranberry Bread

Wela never ceases to amaze. A recipe from her Bride Cookbook. We are becoming His bride. *wink wink*
2 2/3 C sugar
1 can 15 oz. pumpkin
1 C vegetable oil
4 eggs
1 tsp vanilla extract
3 ½ C flour
1 ½ tsp ground cinnamon
1 tsp salt
1 tsp baking soda
¼ tsp ground cloves
1 ½ C coarsely chopped walnuts
2/3 C dried cranberries
In a Large mixing bowl, beat sugar, pumpkin, oil, eggs and vanilla until well blended. Combine the flour, cinnamon, salt, baking soda and cloves; gradually beat into pumpkin mixture until blended. Fold in walnuts and cranberries.
Transfer to two greased 9x5x3” loaf pans. Bake at 350 degrees for 60-70 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks.

Yield 2 loaves, 12 slices each
