Oven Baked Fries w/Fennel & Garlic

According to Chinese Medicine & Vicky, fennel is good for alleviating the pain in the stomach due to indigestion, overeating, eating spicy food, and for potato wedges.
1 potato cut into thin wedges
1-2 Tbsp olive oil
2 cloves of garlic, minced
1 tsp parsley, minced
1 tsp fennel
salt and pepper, to taste
Preheat oven to 425 degrees. In a medium bowl, toss the potato wedges, olive oil half of the garlic, parsley and fennel until the potatoes are coated evenly. Spread out on a pan and bake for 10 minutes checking occasionally to see if browned and crisp. Turn potatoes and bake again until both sides are browned. Sprinkle with salt and pepper.
