For a quick snack: spread tomato paste onto a toasted bagel. Sprinkle garlic powder and mozzarella cheese. Microwave just until the cheese is melted. Sprinkle dried basil on top.
Yes. Toaster ovens are awesome. I don't own one now, but have also found that a hot cast iron with a little water and a lid also works miracles on all sorts of leftovers.

Or you can toast in the oven/toaster oven. And put some pepperoni on top because life tastes better with meat! But yes, I love this simple recipe.
