Neepa's Lemon Bars

UCSD. White love seats. Dinner parties. Charades. Lobster. Care Bear. Board games. Anna, Alice, Sabrina, Neepa. Ah, Neepa. What I like about her lemon bars is that the lemon filling is more like a lemon curd on shortbread than a square lemon meringue pie.

1 1/2 C flour
2/3 C confectioners' sugar
3/4 C butter, softened

3 eggs
1 C sugar
3 Tbsp flour
1/3 C lemon juice
Confectioners' sugar for decoration

Preheat oven to 375 degrees. Grease 9x13" pan.

Combine flour, confectioners' sugar and butter. Pat dough into prepared pan.

Bake 20 minutes in preheated oven until slightly golden. While crust is baking, whisk together eggs, sugar, flour, and lemon juice until frothy. Pour lemon mixture over hot crust.

Return to oven for an additional 15-20 minutes or until light golden brown. Cool on wire rack. Dust top with confectioners' sugar. Cut into squares.

Makes enough bars for one 9x13" pan
