This recipe I got from Sophia Tanaka, an old roommate. Why it says it's from Alaska, I may never know.
CakePreheat oven to 375 degrees.
1 1/2 C flour
1/2 + 1/8 C sugar (ok, a little less than 3/4 C)
2 1/2 t baking powder
1 t salt
1/4 C oil
3/4 C milk
1 egg
1 C blueberries
Streusel
1/3 C flour
1/3 C brown sugar
1/2 t cinnamon
1/4 C butter, cut
1/2 C blueberries
In a medium bowl, mix flour, sugar, bp, salt. Then add the oil, milk, egg and mix. Fold in the blueberries. Spread into 8x8" pan.
Cut up the streusel ingredients (except blueberries) in a separate bowl until the butter is pea sized. Then sprinkle it on top of the cake and top with the 1/2 C blueberries.
Bake for 35 minutes or until a tester comes out clean.
