Baking Substitutions

1 C buttermilk = 1 t vinegar or 1 T lemon juice + 1 C milk

1 C heavy cream (not for whipping) = 3/4 C milk + 3 T melted butter

1 C honey = 1 1/4 C white sugar + 1/3 C water

1 oz. unsweetened baking chocolate = 3 T unsweetened cocoa + 1 T oil or melted butter

1 T baking powder = 1 1/2 t cream of tartar + 3/4 t baking soda
